Miguel relocated to Jersey in 2023 to take up the position of Sous Chef at The Atlantic Hotel working under Executive Chef Will Holland. Miguel brings with him a wealth of experience having worked in some of the best Spanish restaurants in Europe including Dani Garcia’s multi-Michelin starred and world acclaimed BiBo and José Pizarro's eponymous London restaurant Pizarro.
