The ambience is great and is like an old style restaurant, with great service. The wait staff are very polite and efficient, and were kind enough to offer samples additionally for us to try things. The pork belly main was a real treat. Would be very happy to come again.

Superb food. The Beef Wellington was cooked to perfection.

However it was the service that far exceeded expectations. We were greeted upon arrival by the friendly barman, and the high level of service continued throughout the service.

Beautiful food and cocktails. Great service though we had to wait at the bar for quite a long time despite numerous tables being available. Didn't spoil our night and we will definitely return if back in at hellier. Set menu was great value for the quality of food. Service charge automatically added is very annoying!

A Culinary Masterclass in St. Helier: An Unforgettable Evening at Sage
By Nick Lawton (Thiviers, France)
Last night, my partner and I had the absolute pleasure of dining at Sage in St. Helier, Jersey. To call it a meal would be a massive understatement; it was a bona fide culinary experience from the moment we crossed the threshold.
Upon arrival, we were warmly greeted by the maître d’, Patrick. A consummate professional and a genuinely delightful individual, Patrick set the tone for the entire evening with his welcoming demeanor. The front-of-house team was exemplary—immaculately dressed, unfailingly courteous, and highly knowledgeable about the menu, guiding us through our choices with effortless grace.
Now, let’s talk about the food, which was nothing short of spectacular.
The Starters
To begin our gastronomic journey, we sampled two classic starters executed to absolute perfection:
The Seafood & Avocado Cocktail: Elegantly presented in a classic cocktail glass, this dish was a masterclass in freshness. The delicate, sweet seafood paired beautifully with the rich, creamy avocado, all tied together by a perfectly balanced dressing.
The French Onion Soup: As someone who appreciates classic French cuisine, I can honestly say this was the single best French onion soup I have ever encountered. Deep, rich, intensely savory, and topped with that quintessential layer of perfectly melted, gooey cheese, it was pure comfort in a bowl.
The Main Course
For the main event, we both succumbed to the allure of the Fish Pie—and boy, oh boy, what a phenomenal decision that turned out to be! "Delicious" simply doesn't do this dish justice. It arrived bubbling hot, packed to the brim with succulent, perfectly cooked seafood enveloped in a velvety, deeply flavorful sauce, all crowned with a golden, decadent crust. I consider myself a big eater with a hearty appetite, but the sheer generosity of this portion ultimately beat me. It was rich, satisfying, and utterly flawless.
The Grand Finale
Despite being thoroughly defeated by the main course, I managed to find that secret, secondary stomach reserved exclusively for dessert. Thank goodness I did! We rounded off the evening with the Panna Cotta, served with a vibrant rhubarb and ginger compote and a crunchy biscuit crumb. The panna cotta itself was silky smooth with the perfect signature wobble, while the sharp, fiery kick of the rhubarb and ginger cut through the creaminess beautifully. The biscuit crumb added a wonderful textural contrast that made every spoonful a delight.
The Verdict
This was an absolutely fantastic, memorable meal from start to finish. The combination of top-tier hospitality, elegant ambiance, and breathtakingly good food makes Sage a must-visit destination in Jersey.
Will we be back? You bet we will.
